Restaurant Closing Cleaning Checklist
End-of-night cleaning and sanitation walk for a full-service restaurant — BOH line breakdown, dish pit, FOH dining room, and guest restrooms. Run by the closing manager with line cooks, dishwasher, and closing servers.
Pre-Close Line Breakdown

Strip and wipe down hot line stations
Line cooks pull all pans, hotel pans, and inserts from sauté, grill, and garde manger wells. Wipe down rails and shelves with a sanitizer-soaked cloth at the correct ppm (typically 200-400 ppm quat or 50-100 ppm chlorine — verify with a test strip).

Filter and skim fryer oil
Skim particulates, filter through the fryer's filter paper, and wipe down the fry baskets and side walls. Log the oil-change date if oil is replaced — dark, smoking oil is a flavor and food-safety problem.

Scrape and degrease the flat top
While the flat top is still warm, scrape carbon buildup with the grill brick or scraper, then apply degreaser and wipe clean. Season with a thin film of oil. Cold flat tops are much harder to clean and trap residue under the next morning's first cook.

Log walk-in and reach-in temperatures
Cold-holding must be 41°F or below per FDA Food Code. Record the reading on the temperature log; gaps in the log are the first thing a health inspector flags. If the reading is out of range, escalate before closing — do not leave TCS food in a failing unit overnight.

Notify the GM and move TCS food
Walk-in is out of range. Move all time/temperature control for safety food (proteins, dairy, cut produce) to a working reach-in or backup unit. Call the refrigeration vendor tonight, not tomorrow. Document time of failure and time food was relocated for the cooling/holding log.

Rotate stock FIFO and pull use-by items
First-in-first-out: pull older containers forward, place fresh deliveries behind. Toss anything past its use-by date and note it on the waste sheet — waste tracking feeds tomorrow's prep call and the weekly food-cost variance.

Wipe down walk-in shelving and floor
Sanitize wire shelving, sweep the floor, and check drain for blockage. Standing water in a walk-in is a pest-control flag and a slip hazard.
Dish Pit and Three-Bay Sink

Verify three-bay sink sanitizer concentration
Test the sanitizer bay with a fresh test strip: 200-400 ppm for quat, 50-100 ppm for chlorine, 12.5-25 ppm for iodine. Log the reading. Health inspectors check this on every visit; a missing log or out-of-range reading is a critical violation.

Run the dishwasher cleaning cycle
Empty wash and rinse arms, clear food debris from the strainer, and run the manufacturer's delime/clean cycle. Verify final-rinse temperature reaches 180°F (high-temp) or sanitizer concentration is correct (chemical machines).

Break down and sanitize prep tables
Stainless prep tables, low-boy tops, and cutting-board stations get hot-soapy wash, clean-water rinse, sanitizer wipe, air-dry. Color-coded cutting boards (red/raw, green/produce, yellow/poultry) go through the dish machine, not just a wipe-down.

Empty and sanitize BOH trash receptacles
Pull liners, hose out cans behind the building, sanitize, re-line. Trash left overnight in the kitchen is the most common pest-control complaint at next inspection.
Floors, Drains, and Pest Prevention

Sweep and degrease kitchen floors
Sweep before mopping — debris under the mop spreads grease. Use a degreaser appropriate for kitchen quarry tile, not a general-purpose floor cleaner. Pay attention to the gap between the line and the wall where grease accumulates.

Flush floor drains with hot water
Slow drains and standing water at the dish pit are fruit-fly breeding grounds. Pour a kettle of hot water plus enzyme drain treatment weekly; check for backup nightly.

Check pest-control bait stations and glue boards
Inspect the stations placed by your pest contractor (Ecolab, Orkin, Terminix, or local). Flag any catches in the pest-control logbook for the inspector and your account manager. The logbook is reviewed at every health inspection.
Dining Room Reset

Wipe and sanitize all tables and chairs
Closing servers wipe table tops, chair seats, chair backs, and booth bases with sanitizer cloths. Crumbs in chair joints and gum under tabletops are the two spots first-shift servers complain about most often.

Reset tables for tomorrow's first seating
Polished silverware rolled, salt/pepper topped off, condiment caddies wiped, candles or table cards staged. A reset dining room means the morning shift starts on service, not on prep.

Vacuum carpets and sweep hard flooring

Clean banquette seams and high chairs
Banquette seam crumbs, high-chair tray gunk, and booster-seat strap residue are the three spots that get noticed by guests and missed by servers. Pull each high chair and wipe the tray plus the strap.

Wipe down host stand and entry glass
Guest Restrooms

Scrub and sanitize toilets and urinals
Bowl, seat, base, and the floor flange where odor accumulates. Use a bathroom-specific sanitizer, not the kitchen quat — the dwell time and chemistry differ.

Restock soap, paper towels, and toilet paper
Empty soap dispensers and missing paper towels are the #1 reason for one-star bathroom reviews. Top off all dispensers; if a dispenser is broken, log it on the maintenance ticket.

Walk the building and verify all sections complete
Closing manager walks BOH, FOH, and restrooms before locking up. Spot-check the line, the walk-in, the dish pit, and at least two random tables. Catching a missed step now is cheaper than catching it on tomorrow's open or at a surprise inspection.
