  1. Test the UPS protecting the POS server
  2. Run the backup generator under load
  3. Replace UPS battery flagged in the test
  4. Verify LTE failover for card processing
  5. Walk the kitchen for cooler and freezer alarm wiring

Software and System Recovery

  1. Update the POS recovery runbook
  2. Refresh the vendor support contact sheet
  3. Apply pending POS and OS patches
  4. Run a sandbox restore of last night's backup

Hardware Redundancy and Spares

  1. Inventory on-site spare POS terminals and printers
  2. Test the backup router and switch failover
  3. Reorder kitchen printer paper and KDS cables

Staff Drill and Awareness

  1. Walk managers through the POS-down service flow
  2. Stage paper tickets and manual card slips at each station
  3. Run a 15-minute outage drill at pre-shift

Security and Access Review

  1. Confirm cardholder data encryption on the POS
  2. Enforce MFA on backup and admin accounts
  3. Remove POS access for separated employees
  4. Sign off on the monthly backup review
