Health Inspection Readiness Checklist
General Cleanliness and Maintenance
Ensure floors, walls, and ceilings are clean, in good repair, and free of any signs of pests
Check that the lighting is adequate and all light bulbs are working and properly shielded
Verify that storage areas are organized, clean, and that all items are stored off the floor
Food Storage and Protection
Confirm that all food items are stored at least 6 inches off the ground and properly labeled with expiration dates
Check that refrigeration units are working correctly and maintaining temperatures at 40°F or below for cold storage and 0°F or below for freezers
Inspect that all food is covered and protected from cross-contamination, with raw and cooked items separated
Personal Hygiene and Employee Health
Ensure all employees are practicing proper hand washing techniques and using gloves when necessary
Verify that there are no signs of employee illness, and sick employees are restricted from handling food
Check that all employee personal items are stored away from food preparation areas
Pest Control
Inspect the establishment for any signs of pest infestation, including droppings, nests, or damaged products
Ensure that there is a proper pest control program in place and that it is being followed regularly
Check that all doors, windows, and vents are properly sealed to prevent pest entry
Food Preparation and Cooking
Verify that all cooking equipment is clean and in good working order
Check that food is cooked to the correct internal temperatures and that these temperatures are being logged
Ensure that cross-contamination is being prevented during food preparation, with separate cutting boards and utensils for different types of food
Chemical Storage and Usage
Ensure chemicals are stored away from food preparation areas and are properly labeled
Check that Material Safety Data Sheets (MSDS) are available for all chemicals in use
Verify that employees are trained on the proper use and handling of chemicals
